Ingredients:

- 1 cup quinoa

- 2 cups vegetable broth

- 2 parsnips, peeled and chopped

- 2 potatoes, peeled and diced

- 4 cups vegetable broth

- 1 can (14 oz) diced tomatoes

- 2 cups chopped kale or spinach

- Fresh parsley for garnish


Instructions:

  1. Rinse the quinoa under cold water. In a large pot, bring 2 cups of vegetable broth to a boil. Add the quinoa, reduce heat, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
  1. Meanwhile, preheat the oven to 400°F (200°C). In a large bowl, toss the chopped carrots, parsnips, and potatoes with olive oil, garlic, thyme, rosemary, salt, and pepper. Spread the vegetables in a single layer on a baking sheet and roast for 25-30 minutes, or until tender and lightly browned.
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and cook until translucent. Add the roasted vegetables, diced tomatoes, and 4 cups of vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  1. Stir in the cooked quinoa and chopped kale or spinach. Simmer for an additional 5 minutes to allow the flavors to meld. Adjust seasoning with salt and pepper as needed.
  1. Ladle the stew into bowls and garnish with fresh parsley. Serve hot and enjoy!
